Let's say y...I would say similar to bacon fat. Let's say you were going to make a risotto with chicken broth and some kind of vegetable. You could use the schmaltz instead of oil to saute the onions and rice. Makes it a bit more chickeny. A classic use for schmaltz is with cooked chicken livers for chopped liver - served with raw onions and chopped hard cooked egg.
